I know I have seen the answer to this (probably trivial) question, but I can't find it anymore:

I don't know for dvi output (why is it always black?) but for pdf: \setupcolors[state=start,textcolor=red] \starttext \input tufte \stoptext

That does indeed what I wanted, including the text color of inside floats and captions. However, I just noticed that textcolor inside the symbols of fieldstacks remains untouched. Eckhart
