You don't call it, just define it (so no [setuphead=somekeyword={-}]):

\def\verbosenumberconnector{-}

\setuphead
   [chapter]
   [conversion=Word]

\starttext
     \dorecurse{25}{\chapter{or number #1}}
\stoptext

But you need to wait for the update,
