What do you mean with “everything is typeset in math mode". I run your example and got the expected output.
My cambria version is of 2009, V5.93.

Hi, I tested your file and got the following error message > tex > error on line 12 in file test-cambria-font.tex: Math error: parameter \Umathquad\displaystyle is not set Otherwise the text is as expected.
