You don't need to do all this trickery with \definebodyfont, that's done automatically. And you don't want to define your fonts one by one, you want to have a typescript that will do all this for you. Diagnosing this remotely is almost impossible. The log shows that the typescript is read, but your fonts are not used; everything is in Latin Modern.
