It works, but I have overfull box warnings in the log file with italics, as : Overfull \hbox (7.80241pt too wide) in paragraph at lines 178--179 <1: DejaVuSerif @ 12.0pt> sciences (<12: DejaVuSerif-Italic @ 12.0pt> phi-lo-so-phia mar-ga-ri-ta<1: DejaVuSerif @ 12.0pt> ), voire même comme une <12: DejaVuSerif-Italic @ 12.0pt> sa-gesse<1: DejaVuSerif @ 12.0pt> I am currently writing a French manual in philosophy. It is a font setup problem. Remove your font definitions and fallbacks and change \setupbodyfont[mainface] to \setupbodyfont[dejavu] for the start (it will cover greek and cyryllic, too).
Can you describe what you need? Are the requirements given (main font, scripts, serif & sans, fallbacks fonts to other scripts)?
For example IBM Plex https://www.ibm.com/plex/languages/ will cover most of what you need (except cjk for now) and there is a font definition file type-imp-plex.mkiv in the distribution (not all fallbacks defined, yet).
