FWIW, you can have Emacs automatically display ∫ in place of \int etc. in your file (and this is no real substitution, just for viewing). Also, Emacs has the "TeX input method", where typing the four keys \, i, n, t yields ∫ (a Unicode symbol) etc. (It works also for inputting properUnicode accented letters, which is very cool and useful.)
