I just found "PDFLab" for MacOS X, see http://fabien.iconus.ch/english/PDFLab.html I can't recommend Multivalent (http://multivalent.sf.net) enough. OK, it needs Java 1.4, but except for that it is quite nice. It can do concatenation, compression, encryption, ...
